Our Story

Poke Bay was founded with a simple mission — to bring the bright, fresh flavors of the Hawaiian Islands to the heart of Wisconsin. We believe that healthy eating should be vibrant, satisfying, and full of life, and that every bowl should be crafted with care, quality, and creativity.

Our journey began in 2023, when we opened our first Poke Bay location on McKee Road in Fitchburg. From day one, our goal was to offer a dining experience that combined convenience with freshness — serving made-to-order poke bowls filled with responsibly sourced seafood, crisp vegetables, and house-made sauces. The response from our community was incredible, and it quickly became clear that Poke Bay had found its home in Wisconsin.

As our following grew, so did our passion to share our food and philosophy with more people. We soon expanded to Madison, bringing our signature poke experience closer to the city’s vibrant community of food lovers. And we’re not stopping there — our next location in Verona is set to open soon, marking another exciting milestone in the Poke Bay story.
